Ostrich Fillet Steak with Red Wine & Mushroom Sauce

What’s better than a glass of wine and a delicious dinner at home? If you’re looking to try something new with your protein source during dinner, try ostrich steak. This rich Ostrich Fillet Steak with Red Wine and Mushroom sauce will pair perfectly with your red wine and some good company.

Ostrich steak with rich red wine and mushroom sauce is perfect for a special night in. Low in fat and very high in protein, this is something a bit different, Ostrich steak is also very high in iron, a mineral that helps with oxygen uptake and usage in the body, immunity and even helps with energy alongside the protein. Not to mention that mushrooms also contain many great nutritional benefits too. It also has a rich taste and is best served medium rare for the most flavour.

    Ingredients

    • 500 g ostrich steak

    • cups red wine

    • 200 ml beef stock

    • 2 sprigs thyme

    • 400 g mushrooms, washed

    • 4-6 tbsp double cream

    • 125 g butter

    • 2 onions, grated

    • 3 cloves garlic. grated

    • olive oil

    • salt & pepper

    Method

    • Preheat oven to 180°C  / 356°F
    • Prepare an oven tray with Cook and Spray
    • Place a skillet on high heat, add oil and a tablespoon butter, when butter is bubbling, sear the steaks on both sides for about 3 minutes on each side.  Add more butter if needed. When done, add the steaks in the prepared oven tray, put in the oven to cook further if you do not like medium to rare steak.  Otherwise, set oven to a lower temperature to keep steak warm. 
    • Using the same skillet, add more butter, then add the onion and garlic, saute until golden brown.
    • Add the wine. the stock and the thyme. after about 3 minutes the mushrooms, allow to simmer and reduce by half, the sauce should look smooth and glossy.
    • Remove the meat from the oven and plate to let it rest
    • Add the cream, stir well until all the mushrooms are covered.  
    • Taste for salt and pepper, switch off the heat and spoon the sauce over the steaks (optional) to serve
