Maize and Sausage Pie – Everything you love about a braai, in one pie

There are two foods we often eat together in South Africa and that is “pap en wors” or maize and sausage. These two foods often go together with a braai with friends and family and we decided to combine them into one delicious side. This Maize and Sausage Pie has all of the Proudly South African flavours you are looking for this summer.

In this recipe we use “boerewors” which is the South African version of beef sausage and often contains a bit of pork for extra fat. Maize is often cooked as a porridge but for this recipe we need it to be a bit more cooked into a stiffer consistency. The Maize and Sausage Pie tastes just like the food you can find at most South African braais. However, it is served with lots of crispy cheese on top to accompany the rest of the delicious food for that day.

Maize and Sausage Pie Recipe

Ingredients

  • 3 cups cooked maize

  • 1 kg cooked sausage (uncut)

  • 250 ml tomato relish

  • 1 cup grated cheese

  • 1 spring onion, chopped

  • 3 tbsp butter

Method

  • Mix the butter into the maize. Using 2 cups of maize, make a crust in a greased springform pan.
  • Place the sausage or boerewors over the crust, keeping the circular shape. Pour over the relish.
  • With the remaining maize, cover the sausage. Sprinkle the cheese over the top. Bake for 25 minutes.
  • Garnish with the spring onion.
