Upside-Down Peach Dessert – The sweet tooth’s treat

Calling everyone with a sweet tooth among us! This upside-down peach dessert is a sweet sensation, downright delicious and the perfect pudding to enjoy after the main meal. It is so quick and easy to prepare. Ready within 45 minutes, you can quickly whip it together if you receive last-minute news that guests are coming over. And no need for an extra trip to the grocery store as the ingredients are most likely already in your pantry.

So, what makes this upside-down peach dessert so delectable? During the cooking process, the butter and sugar are melted together and caramelised to a tasty, syrupy sauce. Combined with tinned peaches, this upside-down peach dessert will indeed fulfil any sweet craving you may have.

You can, of course, also experiment with other tinned fruit flavours such as pitted lychees, baby apples, guava halves or pear halves. Or you can even try it with canned strawberries as well. These fruits are all sweet and will complement this dessert. Add a dollop of cream for a complete sweet experience. And be prepared, second helpings are very common with this dessert.

    Ingredients

    • 113 g butter

    • cups brown sugar

    • 2 tins peaches in light syrup or fruit juice, drained (2 x 410 g)

    • ½ teaspoon baking powder

    • 3 tablespoons warm water

    • 1 teaspoon vanilla essence

    • 1 cup self raising flour

    • 3 eggs

    • 1 cup caster sugar

    Method

    • Prepare a square or round deep cake tin with Cook & Spray.
    • Preheat the oven to 180°C / 356°F.
    • Melt the butter and add the sugar and mix well. Try to get as much of the sugar melted; it can almost caramelise.
    • Line the base of the deep cake tin with the butter and sugar mixture.
    • Arrange the peaches on the bottom of the base with the cutting edge facing down.
    • Use a mixer and beat the eggs and caster sugar until fluffy and almost white.
    • Add vanilla essence and water and mix again.
    • Stir in the sifted flour and baking powder, mix carefully until smooth. 
    • Pour the mixture over the peaches.
    • Bake in the preheated oven for 30 to 40 minutes until golden.
    • Let it cool off and place on a serving plate. The butter and sugar added to the base is the sauce. 

    Notes

    • Super delicious when served with cream.
