Grilled Sweetcorn Salad – Taste the summer!

What do we, South Africans, do when it’s summer? We bring out the braai! It’s time to enjoy new fresh summer salads, open fires and lots of guests. Our Grilled Sweetcorn Salad is the perfect combination of ingredients to awaken your pallet this summer.

This salad has everything you need for the tastiest salad. Your guests will love the crunch from the smoky bacon, sweetcorn and coleslaw paired well with perfectly cooked shredded chicken. The tomatoes, onions and a light salad dressing will provide a much need freshness to the dish.

Grill your corn in the embers of a fire. Cooking chicken can take a lot longer to cook on an open fire than the rest of your food, so stove-top is the way to go. If you have leftover chicken, even better as it will cut down on prep time.

    Ingredients

    • 2 large grilled corns

    • 2 cups white and red shredded coleslaw

    • 1 large tomato (quartered)

    • 1 large onion (thinly sliced)

    • 1 chicken breast (cubed or shredded)

    • ½ cup bacon (grilled, drained & diced)

    • ½ cup creamy salad dressing

    • ½ tsp BBQ spice

    • salt & pepper

    Method

    • In a large salad bowl, add the coleslaw. Drizzle the salad dressing over the coleslaw.
    • Layer the shredded or cubed chicken, bacon bits and onions. Arrange the sliced tomatoes around the dish.
    • Remove the corn kernels from the corn by cutting it off. In a bowl, mix the corn kernels with salt, pepper and BBQ spice.
    • Sprinkle the corn mixture over the salad.
