Cucumber Salad – Perfect as a light meal or healthy side-dish

Cucumber Salad Recipe

    Ingredients

    • 1 large Diced cucumber

    • 1 medium Diced red onion

    • 1 tsp Sesame seeds

    • 2 tsp Lemon juice

    • 1 tsp Extra virgin olive oil

    • ¼ medium Red pepper

    • 1 pinch Salt

    • 1 pinch Pepper

    Method

    • Wash the cucumber and dry. Dice into thin slices and place into a small bowl.
    • Cut the red pepper and red onion into wedges and place into the small bowl.
    • Add the lemon juice, olive oil, salt and pepper.
    • Mix together until all ingredients are combined and sprinkle the sesame seeds on top.
    • Serve.
