Chocolate Fudge Cupcakes filled with chocolatey goodness

Chocolate cake has always been a firm family favourite and this miniature version is no different. It is perfect and deliciously moist.

The chocolate fudge icing and white chocolate topping just adds that extra bit of yummy decadence that will have you craving for another bite.

Luckily, this batch makes 18 cupcakes.

    Moist chocolate cupcake with a chocolate fudge icing.

    Ingredients

    • 2 cups cake flour

    • 1 tsp baking powder

    • 2 tsp bicarbonate of soda

    • ¼ tsp salt

    • ½ cup cocoa powder

    • 2 cups sugar

    • ½ cup oil

    • 1 cup buttermilk

    • 1 cup strong coffee

    • 1 tsp caramel essence

    • INGREDIENTS – CHOCOLATE FUDGE ICING
    • ¼ cup sugar

    • 50 ml hot waterwater

    • 3 TBS butter or margarine

    • ¾ cup icing sugar

    • 3- 4 tablespoons of cocoa powder

    • 1 tsp caramel essence

    • 3- 4 squares of melted white chocolate (optional)

    Method

    • Line a muffin tray with cupcake liners or spray with cooking spray. Pre-heat the oven to 180°C.
    • Sift together all the dry ingredients. Stir in the sugar. Make a well in the centre and add in all the liquid ingredients. Whisk together lightly, making sure there are no lumps. Spoon the mixture into the tin up to ¾ full. Bake for 20- 25 minutes or wait until a skewer comes out clean. Remove and leave to cool before icing.
    • METHOD – CHOCOLATE FUDGE ICING
    • Place the sugar, water and butter in a small saucepan. Allow the sugar to melt and bring to a boil, then remove and cool slightly. Add the essence. Sift the cocoa powder and icing sugar together and then pour in the cooled liquid. Beat until it has thickened. Now you can spread it over the cooled cupcakes.
    • If desired, pipe stripes across the top with melted white chocolate and run a toothpick across the top in alternate directions to give your cupcakes a fabulously delightful feathered look. Or you can just drizzle the white chocolate over the cupcakes.
