The Perfect Winter Dish: Juicy Pork Casserole Recipe

This hearty and delicious pork casserole is perfect for a cold winter evening. Serve with rice or simply soak up the flavoursome juices with chunks of bread.

    A hearty and delicious pork casserole dish.

    Ingredients

    • 1 kg pork stew, cut into small cubes and excess fat removed

    • 4 tablespoons of olive oil

    • 4 – 6 carrots, chopped

    • ½ green pepper, chopped

    • 2 large onions, chopped

    • 2 tablespoons fresh thyme

    • 4 bay leaves

    • 2 tablespoons crushed garlic

    • 410 g tin tomatoes

    • 2 teaspoons chicken stock mixed with 500ml water

    • 4 tablespoons of flour

    • 2 tablespoons grated cheese, parmesan or cheddar

    Method

    • Preheat the oven to 150°C – 302°F.
    • Heat half the olive oil in a medium saucepan of your choice.
    • Dust the pork with the flour.
    • Add half the pork to the pan and brown on all sides, place in a dish and set aside. Repeat with the rest of the meat.
    • Add the remaining olive oil to the pan, along with the onion, carrots and green pepper and cook, stirring occasionally, for about 10 minutes, until the onion has softened.
    • Return the meat to the pan with the garlic, tomatoes, bay and thyme leaves.
    • Pour in the 500ml stock into the pan. Bring to the boil, then carefully pour the contents of the pan into an ovenproof casserole of your choice. Cover with a lid then transfer to the oven and cook for 2 hours.
    • Before serving add the grated parmesan or cheddar and garnish.
