Lemon yoghurt mousse – Airy summer dessert

    Ingredients

    • 400 grams natural yoghurt

    • 9 leaves gelatine

    • 6 egg whites

    • 400 grams cream, whipped

    • 175 grams sugar

    • 400 ml lemon juice

    • 200 grams honey

    • 400 grams chopped fruit of your choice

    • 200 grams muesli

    Method

    • Beat the egg white and sugar to form a meringue mixture.
    • Add the gelatine to water and dissolve. Then add to the yoghurt. Add the lemon juice to the yoghurt.
    • Mix in the meringue and fold in the semi whipped cream.
    • Leave to set for at least 12 hours.
    • When ready to serve, add a layer of mousse, followed by a layer of granola and fruit. Keep layering until the glass is full.
