Fajita Breakfast Egg Cups – A spicy way to start the day

Do you want to make breakfast more fun by adding some different flavours and a bit of spice? Breakfast doesn’t need to be boring and these Fajita Breakfast Egg Cups are the perfect way to have some fun in the mornings. They are perfect for those weekend brunch treats or when you’re having your morning cup of coffee.

Making these Fajita Breakfast Egg Cups is as easy as mixing, pouring and baking in the oven. They are great to eat by hand as they are just like savoury muffins. The peppers adds sweetness while the garlic adds flavour together with the paprika which adds spice. Everybody loves cheese and these delicious egg cups have crispy cheese right on top. You can add some of the cheese into the wet mixture for the melting on the inside, but leave some to finish-off the look on top. They are ready when the skewer comes out clean and the outside is nice and golden.

    Ingredients

    • 10 large eggs

    • cup milk, (dairy or non- dairy)

    • 2 large bell peppers, sliced

    • 1 white onion, diced

    • ½ tsp sea salt

    • ½ tsp freshly ground black pepper

    • 1 tsp smoked paprika

    • 1 tsp ground cumin

    • ½ tsp garlic powder

    • ½ cheddar cheese, grated

    • parsley, chopped

    • avocado oil spray

    Method

    • Mix together all of the ingredients, except the cheddar cheese, in a bowl.
    • Prepare a muffin pan with spray & cook.
    • Using a ladle, fill the muffin tin cups with your egg mixture. Add the cheese on top when the cups have been filled.
    • Place in a preheated 180°C oven for 12-15 minutes. Test with a skewer if they are done. If the skewer comes out clean, it’s done.
