Pumpkin fritters – Tasty, creamy oven-baked delicacy

Pumpkin is such a versatile veggie to cook with. This oven-baked pumpkin fritters recipe is proof of that. We all know the traditionally deep-fried fritters. However, this oven-baked pumpkin fritters recipe is perhaps less guilty. It omits all the oil that traditionally goes with this tasty bite.

This oven-baked treat is sweet and tasty. After coming out of the oven, top it with a mouth-watering sauce and a generous sprinkle of cinnamon sugar.

    Ingredients

    • Pumpkin fritters
    • 125 g soft butter/margarine

    • 200 ml sugar

    • 3 eggs

    • 1 cup (250 ml) cake flour

    • 15 ml baking powder

    • 2 ml salt

    • 3 cups (750 ml) cooked finely mashed pumpkin

    • 5 ml vanilla essence

    • fine cinnamon

    • Sauce
    • 4 eggs

    • 1 cup (250 ml) water

    • 1 cup (250 ml) sugar

    • pinch of salt

    • 1 heaped tablespoon maizena

    • ½ cup (125 ml) lemon juice

    Method

    • Pumpkin fritters
    • Preheat the oven to 180°C.
    • Beat the butter, eggs and sugar well.
    • Sift the flour, salt and baking powder and add to the egg mixture and mix well.
    • Add the cooked pumpkin and vanilla and mix until well blended.
    • Pour into greased muffin pans.
    • Bake until golden and cooked through.
    • Leave to set and cool.
    • Sauce
    • Combine the sauce ingredients.
    • Cook and stir over medium heat until the sauce thickens.
    • Drizzle spoonfuls of the sauce over the baked pumpkin cakes.
    • Sprinkle with cinnamon-sugar.
