Crispy Chicken – Deliciously fried chicken for a banting diet

Hungry anyone? Biting into a piece of crispy chicken packed with flavour and delicious juices is definitely the answer. Who does not love a drumstick covered with a flavoursome, crunchy coating?

Many South African households enjoy a tasty chicken meal at least once a week. There are literally countless dishes you can prepare with chicken, but this crispy chicken recipe takes dinner time to the next level.

The best part about this crispy chicken recipe is that it is banting friendly. So, if you are following a banting diet, this recipe will not jeapordise your efforts. Even if you do not follow a banting diet, you will still love this chicken bite.

The coating is a delicious combination of rich spices like paprika, oregano, tarragon, parsley, thyme, chives, garlic powder, onion powder and celery salt. Before sinking your teeth through the crispy exterior into the soft, juicy chicken, you will inhale the rich spicy aroma.

Serve this crispy chicken with some leafy green kale, spinach or broccoli.

    Ingredients

    • Chicken
    • 8 chicken drumsticks or 1 whole chicken, cut into pieces

    • 3 eggs, beaten

    • ½ cup coconut or cold pressed macadamia oil

    • Coating
    • 1 cup fine coconut flour

    • 4 teaspoons paprika

    • 1 teaspoon salt

    • 1 teaspoon pepper

    • 1 teaspoon chicken seasoning (sugar and corn starch free)

    • 1 teaspoon oregano

    • 1 teaspoon tarragon

    • 1 teaspoon parsley

    • ½ teaspoon thyme

    • 1 teaspoon chives

    • ½ teaspoon garlic powder

    • ½ teaspoon onion powder

    • ½ teaspoon celery salt

    Method

    • Sift flour and add together all the coating ingredients and place in a clean plastic bag. Coat each chicken piece first with the beaten egg, then with the flour mixture in the bag. Make sure you coat each piece completely with the flour.
    • Heat the oil in a skillet. Brown the chicken in oil slowly, uncovered.
    • Once browned, cover the skillet and keeping frying on a very gentle heat until the chicken is fully cooked. Place on paper towels to drain out the excess.
