Smoky Mushroom Popcorn – Snacktime is here

Smoky mushroom popcorn, anyone? Yes, as surprising as it may sound, popcorn and mushrooms are a delicious combination to try next time you feel munchy and are searching your pantry for a snack to enjoy.

Mushrooms are so versatile and there is literally countless tasty meals and snacks one can prepare with this nutrient-packed fungus.

Fun fact: Did you know that mushrooms are botanically classified as fungi but considered a vegetable for nutrition?

Mushrooms are a powerful source of vitamin D, proteins, and carbohydrates. So, they are an excellent food choice for children to ensure they get those important vitamins and minerals in their diet.

So, next time your children ask for a snack, prepare this smoky mushroom popcorn snack for them. The popcorn coated mushrooms are seriously delicious and will easily become a favourite. Not only will your children love the snack, but as a parent, you can rest assured that they are actually enjoying a nutrient-packed snack.

Smoky mushroom popcorn is also suitable to serve as a vegan or vegetarian snack. Or prepare them as an appetising starter or to brighten your loved ones’ lunch boxes.

Smoky Mushroom Popcorn Recipe

    Ingredients

    • 300 g baby button mushrooms

    • ½ cup Panko bread crumbs

    • ½ cup biltong dust

    • 1 cup plain popcorn

    • 1 teaspoon chilli flakes

    • ½ lemon, zested

    • 1 tablespoon sesame seeds

    • 2 tablespoons hoisin sauce

    • 2 tablespoons soy sauce

    • olive oil for frying

    Method

    • Blitz the popcorn in a food processor until you’ve made chunky crumbs.
    • Mix the panko, popcorn crumbs, biltong dust, chilli flakes, sesame seeds and lemon zest in a large mixing bowl and set aside.
    • In a non-stick frying pan add a drizzle of olive oil and sauté the mushrooms until they release their water and begin to brown. Add the soy sauce and hoisin and roll them around to glaze each one. Allow the sauce to reduce and become sticky.
    • Toss the glazed mushrooms in the popcorn mix making sure each one is well coated.
    • Serve as a snack in jars or cones at a party or while watching your favourite tv show.
