Chocolate Chip Lentil Blondies – A healthy twist on traditional brownies

If you are trying to fight your sweet tooth, these chocolate chip lentil blondies are the answer. Yes, lentils in a cookie may sound a bit foreign but it honestly makes for a super delicious treat. You won’t even know that lentils are buried in these tasty cookies.

These chocolate chip lentil blondies are fluffy and chewy, not to mention packed with an intoxicating rich sweet taste everyone with a sweet tooth is craving. For a complete vegan treat, make sure you use dairy-free chocolate chips.

    Ingredients

    • ½ cup red lentils (dry)

    • ½ cup peanut butter

    • cup maple syrup

    • 1 tablespoon vanilla extract

    • 1 cup rolled oats, ground to a flour

    • ½ teaspoon baking soda

    • ¼ teaspoon sea salt

    • cup chocolate chips, plus extra to sprinkle on top (use diary-free for a vegan option)

    Method

    • Preheat the oven to 180°C, and grease a 23 x 23 cm baking pan.
    • Cook the lentils according to the package directions, then drain, cool and process to a smooth paste in a food processor (add extra water if necessary).
    • Whisk the dry ingredients together in a large bowl. In another bowl, mix together the peanut butter, maple syrup, lentil puree and vanilla until smooth.
    • Fold in the oat mixture, and then gently fold in ⅓ cup chocolate chips. Bake for 20 – 25 minutes. Cool the brownies on a wire rack and cut into 16 squares.
