Low Carb Crumbed Chicken with a side of Zesty Zoodles

    Ingredients

    • cup almonds, raw, unsalted

    • 100 g chicken breasts, skinless, boneless

    • 1 egg

    • 1 tablespoon extra virgin olive oil

    • 1 medium lemon

    • 400 g zucchini (baby marrow), spiralised into noodles

    • 1 clove garlic, fresh, minced

    • 1 teaspoon paprika, ground

    • 1 teaspoon black pepper, ground

    Method

    • Blend the almonds until they are a powder texture.
    • Break the egg in a bowl, and whisk.
    • Cut the chicken breasts in half by slicing down the length of them. Using a tenderizer, pound out both sides of each chicken piece. Coat the chicken completely in egg. Then, coat each side of the chicken in the ground almonds.
    • Heat the olive oil in a pan over medium heat. Add the chicken pieces, and cook for 5 minutes each side.
    • Once the chicken is cooked through, remove from the pan. Add the spiralized zucchini to the pan. Squeeze half of the lemon onto the vegetables, and add the garlic, paprika and pepper. Cook for 2 minutes.
    • Serve the chicken with lemon slices (garnish with micro herbs), and serve the zoodles on the side.
