Prawn Cocktails in a Marie Rose Sauce – Classic elegance to impress your guests

Impress your guests with elegant Prawn Cocktails in a Marie Rose Sauce. The combination of peeled prawns lightly tossed in a rosy sauce on a bed of thinly sliced iceberg lettuce is simply divine.

Prawn Cocktails in a Marie Rose Sauce were very popular in the eighties. However, it is one of those classic dishes that will always remain in fashion. First, you need to thaw the frozen prawns. In order to thaw them quickly, just place the frozen prawns in cold water with a teaspoon of salt. After 15 minutes, drain the water from the prawns and you are ready to prepare your stylish starter.

There are a number of variations you can bring to this timeless starter. You can add some avocado slices, dill or even finely chopped gherkins. Or inject a hint of hotness with a sprinkle of cayenne pepper or tabasco in the sauce. The extra kick will accentuate the flavour of the dish even more!

Prepare these creamy starters in elegant martini glasses or any glass bowls you may have at hand. Or, if you do not have any glass bowls, why not serve them in lettuce cups?     Ingredients

    • 900 g frozen prawns, peeled and thawed

    • 3 cups iceberg lettuce, finely sliced as well as a few larger iceberg leaves

    • lemon wedges (optional)

    • SAUCE
    • 165 ml mayonnaise (good quality)

    • 1 tablespoon ketchup

    • 1 teaspoon Worcestershire sauce

    • 3 teaspoons creamed horseradish 

    • pinch of cayenne pepper

    Method

    • Place the thawed prawns in the microwave for about 6 minutes on high. Allow to cool.
    • Mix all the sauce ingredients together in a small bowl.
    • Add the sauce with the prawns.
    • Place some of the lettuce in serving dishes. Martini glasses look really elegant but you can use any small serving glass bowl. Lastly, add the large pieces of lettuce.
    • Divide the prawns evenly, and add in the bowls and serve immediately.
