If you use pointy kebab sticks instead of popsicle sticks, there is no need to add the holes as the sticks will do it for you. • 2 cups dark chocolate chips or chunks

    • 1 tbsp unrefined coconut oil

    • ½ cup raw pecan nuts, roughly chopped

    • cup dried cranberries or raisins

    • 10-12 wooden popsicle sticks

    Method

    • Add the coconut oil to the chocolate chips and place in the microwave on high.
    • Melt for 30 seconds intervals, stirring after each other until fully melted and smooth. Transfer to a shallow plate that will allow you to easily drip your apple slices. (Alternatively, you may melt your chocolate over a double broiler on the stove, stirring constantly.)
    • Line a large baking sheet with parchment paper and set aside. Using a very sharp chefs knife, carefully slice your apples into ½ inch slices as shown. (A mandolin would work well for this too gently remove any apples seeds from your slice.
    • With a paring knife, make a small slit into the bottom of each apple slice. This will help you insert the popsicle sticks easier. Carefully insert a popsicle stick into each piece of apple. Dip apple slices into your melted chocolate of evenly cover both sides.
    • Gently place apples on your prepared baking sheet.
    • Immediately sprinkle with pecans and cranberries. Refrigerate for 15 minutes or until the chocolate is fully set.
    • Serve immediately and store any leftovers in an air tight container and refrigerate.
