Pumpkin Loaf – There’s nothing spooking about this pumkin loaf

It’s pumpkin season all over the world and pumpkin goes with everything. There are pumpkin salads, pumpkin-spiced lattes and the favourite pumpkin pie. But did you know that you can make a pumpkin loaf too? Our Pumpkin Loaf recipe is delicious and perfect for Halloween season. You can serve slices with tea, as a dessert or snack at home or to your friends.

Pumpkin is a very versatile vegetable which fits very well into almost any type of meal. Butternut soup as a starter, in a salad or roasted with a main. But we love it as a sweet treat too. Our Pumpkin Loaf is light and fluffy with a great combination of sweet and savoury flavours. Each slice can be eaten without any toppings, however, a smear of butter or a dollop of sweetened cream cheese or whipped cream turns this pumpkin loaf into the best alternative loaf out there.

Ingredients

  • cups flour

  • 1 tsp baking soda

  • 1 tsp ground nutmeg

  • ½ tsp ground cloves

  • ½ tsp baking powder

  • ½ tsp salt

  • 4 eggs

  • 1 cup white sugar

  • ¼ cup light brown sugar

  • ¾ cup vegetable oil

  • 1 cup diced pumpkin

  • ½ tsp vanilla essence

Method

  • Mix the eggs and sugar together. Add the eggs and oil.
  • Add the dry ingredients.
  • Add the pumpkin. Pour the mixture into 2 greased medium bread tins.
  • Bake at 180 °C for 30 minutes.
  • Optional: Serve the pumpkin loaf topped with sweetened cream cheese.
