Pulled Beef, Onion & Blue Cheese Sandwich – Mysteriously delicious

Who doesn’t love a stacked sandwich? Especially when it’s stacked like something out of a cartoon. There is almost always leftovers when you’ve made a roast over the weekend. And, there is nothing better than making one big sandwich with your leftovers the next day. This Pulled Beef, Onion & Blue Cheese Sandwich is as succulent, rich and tasty as it looks.

The Pulled Beef, Onion & Blue Cheese sandwich would fit perfectly on a deli menu. It has tender pulled beef, sweet caramelised onion and creamy blue cheese to give it a big punch of flavour. This very decadent sandwich can be served as a main meal as well as one great lunchbox option. Add a fried egg and you have a club sandwich of note. Having leftover beef roast is always a bonus, but you can also give this Garlic Beef Roast a try as well. You’ll be enjoying your stacked sandwich in no-time while relaxing on the couch or having a family dinner.

This sandwich will even make Scooby-Doo and Shaggy jealous.

    Ingredients

    • 500 g cooked beef roast

    • 2 onions, sliced

    • salt & pepper

    • 5 ml BBQ seasoning

    • 2 ml sugar

    • 100 g blue cheese, crumbled

    • 6 garlic rolls

    Method

    • With 2 forks, shred the roast apart.
    • In a saucepan, heat the oil. Add the onions. Reduce the heat. Season well. Add the sugar. Fry until golden brown. Add the beef and heat.
    • On buttered roll, layer the beef, onion and then the blue cheese on top.
    • Optional: Add a sunny-side up egg.
