Breakfast Spud – Potatoes, bacon and eggs. The perfect start

Potatoes are one of the world’s most versatile food sources. It’s packed into curries, stews, fried in oil, baked in the oven or even turned into delicious hashbrowns. Today, we are loading them up with bacon, eggs and cheese. Spuds come in many forms. Often with salmon and cream cheese if you want to be fancy, or go old-school with butter and sour cream. However, today, we know that you want it to start your day with a fully loaded Breakfast Spud. You can boil your potatoes and finish cooking them in the oven before opening them up and filling them with these delicious ingredients.

The Breakfast Spud is perfect when you have to feed a hungry crowd and have a long weekend days ahead of you.

    Ingredients

    • 6 medium boiled potatoes

    • 12 slices back bacon

    • 12 eggs

    • 5 ml mixed herbs

    • 15 ml vegetable oil

    • salt & pepper

    • cheese (optional)

    Method

    • Halve the potatoes.With a spoon, remove the middle of the potato to make a hollow space for the egg. Drizzle with oil.
    • Place a strip of bacon over each potato. Drizzle with oil. Bake in a pre heated oven, 200 degrees, for 10 minutes. Remove from the oven.
    • Break an egg over each piece of bacon. Season with salt, pepper and herbs. Place back in the oven for 10 minutes.
    • Grated cheese over the egg optional (opitional)
