Spinach Quiche – Light, flaky and packed with savoury flavour
Are you looking for more great breakfast recipes? It’s so easy to skip breakfast in the morning, but this Spinach Quiche will not let you skip a meal again. Spinach Quiche is welcome at the breakfast table, lunch plate or as a tea time snack.
This recipe calls for blind baking, but you are welcome to use ready-made pastry. Just follow the instruction on the packet. Blind baking a pie crust is simply pre-baking the crust, without filling, then adding the filling once the crust is baked. I added wax paper with some uncooked rice, you can add whatever you like, or just prick the crust with a fork before baking. Spinach Quiche is packed with a light and flaky crust, filled with spinach and eggs, both packed with lots of good vitamins and minerals.
Sprinkle on some feta cheese and/or bacon bits and you’ll be having this every single day. It also serves perfectly well with a delicious salad to make a great light lunch.
