Cinnamon Sugar makes these Pumpkin Fritters a treat

We know that there are quite a few variations of this recipe for pumpkin fritters, so why this one? Well if you like pancakes this may be the one for you. It resembles a thick pancake but is made with pureed pumpkin. Now, if you haven’t made pumpkin fritters before don’t be alarmed. With this simple recipe you’ll be making them in your sleep.

Though this is part of the dough food family, it is made from pumpkin which may make you reason that it is a little bit healthy. However, with flour in the mix it is certainly not winning any awards for healthiest food to eat alone or serve as a side. What we can tell you is that it is extremely delicious. Especially when served with cinnamon sugar, it tastes just like dessert.

How to make perfect pumpkin fritters

    Ingredients

    • 1 cup cake flour

    • 2 tablespoons baking powder

    • Pinch of salt

    • 3 teaspoons sugar

    • 1 cup cooked mashed pumpkin

    • 3 teaspoons melted butter

    • 100 ml milk

    • 1 egg

    • 5 ml vanilla essence

    • oil for frying

    • cinnamon sugar for serving

    Method

    • In a bowl sift together the flour, salt and baking powder and stir in the sugar.
    • In a separate bowl whisk the egg and add milk, melted butter and vanilla essence.
    • Gradually add the egg mixture to the flour, alternating with the pumpkin, and stir with a wooden spoon until you have a thick and smooth batter.
    • Allow the mixture to rest in the fridge for 30 minutes.
    • Spoon the batter into fritters and drop into an oiled frying pan on a medium-low heat.
    • Once the mixture forms bubbles on top you will know it is time to turn the fritter and cook the other side.
    • Cook until golden. To serve, sprinkle with cinnamon sugar.
    • Add mashed bananas for banana fritters, or omit the sugar and add grated baby marrows for savoury baby marrow fritters.

    Notes

    • You can make a variety of fritters, sweet or savoury depending on what fruit or vegetables you have on hand.
