Roasted Lemon-Butter Chicken – It’s playtime with flavours

There is a myriad of ways to prepare a succulent and tasty chicken dish. This roasted lemon-butter chicken is lip-smacking delicious. The skin is oven-baked to a piquant crispy crust with soft, flavoursome chicken inside.

This meal can be prepared last-minute when you realise that it is almost dinner time and you have not had a chance to step into the kitchen yet. The lemon juice adds some zest to the chicken which makes it really toothsome.

Chicken has been part of the human diet for thousands of years and its nutritional value cannot be underestimated. Not only is chicken an excellent source of lean meat but it is also packed with vitamins and minerals. It contains vitamin B3 and B6 which aid our metabolism and nervous system. Chicken is also rich in phosphorus which strengthens our teeth and bones.

When preparing oven-baked chicken pieces you can play around with different flavour combinations to keep it interesting. Chicken is usually enjoyed at least once a week in most households. So, experimenting with new flavours will ensure that dinner time remains exciting.

Serve this roasted lemon-butter chicken on a bed of fried rice and a crunchy coleslaw. The combination of flavours will make your taste buds dance their happy dance.

Roasted Lemon-Butter Chicken

Ingredients

  • 10 small chicken pieces (with skin)

  • 2 tablespoons lemon and rosemary seasoning

  • ¼ cup butter 

  • 1 cup fresh lemon juice

  • 1 tablespoon lemon zest (optional)

  • freshly ground black pepper

Method

  • Preheat oven to  180°C  / 356°F.
  • Spray an oven tray and rack with Cook & Spray.
  • Place chicken pieces on the oven rack.
  • Add butter under skin of each chicken piece.
  • Sprinkle the top of each chicken piece with lemon juice, zest and lemon and rosemary seasoning.
  • Bake in the preheated oven for 25 to 30 minutes. Halfway through the baking, remove the oven tray, rotate the chicken pieces and sprinkle with more lemon juice, lemon and rosemary seasoning and return to the oven.

Notes

  • Serve with a salad of your choice.
