Bacon, Spinach and Feta Frittata: Mid-morning snack anyone?

Get creative with your brunch and try this easy and versatile frittata. Fluffy eggs topped with your favourite fillings.

A frittata is an egg-based dish traditionally served for breakfast or as a light lunch. It falls in the category somewhere between an omelette and a crustless quiche, but without all the fuss! Everything is made in one pan and is ready in under 20 minutes.

 What makes this dish so great is that you can use any fillings of your choice. The options are endless. Here are some great variations for you to try. 

  • Biltong, peppadew and feta 
  • Broccoli, potato and cheddar 
  • Salami, mixed peppers and olives 

For a vegetarian frittata, just omit the meat and add more veggies of your choice. 

To make a meal out of it, serve with a salad or thick slices of fresh bread.

Note: Make sure you use an oven proof pan, cast iron for example, as the pan will need to go into the oven for the last few minutes of cooking. If you don’t have an oven proof pan, simply put a lid on top of your pan at the end to cook the top layer of egg and melt the cheese.

    A easy mid-morning snack filled with bacon, spinach and feta. Who could resist?

    Ingredients

    • 8 eggs

    • 1/2 cup milk

    • 1 teaspoon salt

    • 1 teaspoon pepper

    • 2 teaspoons herbs of your choice, either fresh or dried

    • 1 teaspoon paprika

    • 1 cup bacon, or meat of your choice

    • 1 cup spinach, or veggies of your choice

    • 1/2 cup feta, or cheese of your choice

    Method

    • Preheat the oven to grill.
    • Whisk the eggs, milk, salt, pepper, herbs and paprika together.
    • Lightly grease a large non-stick oven-proof pan. Heat the pan and fry the bacon until cooked thoroughly. Add the spinach, stirring frequently.
    • Once the spinach has wilted, add the egg mixture. Using a spatula, gently scrape the sides to allow the egg to cook underneath.
    • Cook until the bottom is almost set, about 8 minutes.
    • Sprinkle the cheese on top and place the pan underneath the grill for 2 – 3 minutes. This will allow the cheese to melt and the top layer of egg to cook. If you don’t have an oven proof pan, cover the pan with a lid and cook on the stove for a few minutes.
    • Cut into wedges and serve warm or cold.
