Tired of the same breakfast? Try these Orange, Apple and Muesli Muffins

Add a healthy kick to this beloved baked treat with fresh fruit such as apples and oranges with a dash of muesli. These ambrosial muffins make for a wonderful breakfast or midday snack.

Oranges are in season and that means you can take advantage of the delicious sweet fruit loaded with Vitamin C and antioxidants which will give your immune system the boost it needs.

What is even better is that these muffins only take 15 minutes to bake and your home will be filled with the mouthwatering aroma of delicious muffins.

Orange, Apple and Muesli Muffins Recipe

    These delicious muffins are packed with flavour and goodness.

    Ingredients

    • 1 1/2 cups cake flour

    • 1 cup muesli

    • 1 cup brown sugar

    • 2.5 ml salt

    • 15 ml baking powder

    • 75 ml melted butter

    • 2 large eggs

    • 1 cup milk

    • juice and zest of one whole orange

    • 5 ml vanilla

    Method

    • Preheat the oven to the 170 degrees Celsius and grease a standard 12 portion muffin tray or line with muffin cups.
    • Sift flour, salt and baking powder together in a bowl and stir in the muesli.
    • In a separate bowl whisk eggs, milk, orange juice and zest, melted butter and vanilla essence.
    • Gradually add the wet ingredients to the dry ingredients stirring only until combined.
    • Divide the muffin batter in the muffin tray and sprinkle with cinnamon sugar.
    • Bake for 15 minutes at 170 degrees Celsius until muffins are golden and a toothpick comes out clean.
    • Serve with warm with butter and cheese or enjoy as is.
