Get Spicy with this Homemade Sweet Chilli Sauce Recipe

From chicken strips to spring rolls, sweet chilli sauce works with almost anything you can dip. By making your own sweet chilli sauce , it will save you money and the flavour will be so much more authentic.

Helpful Tips

  • We all have a preferences- hot or not. This depends on the seeds of the chilli. The more seeds you have, the spicier your sauce will be. Be sure to wash your hands well after deseeding the chillies.
  • Once you have finished deseeding the chillies, chop them in half centimetre pieces.Then soak in a cup of hot water with some star anise for a few minutes. This process will draw out all the flavours.
  • Simmer the mixture together with half a cup of spirit vinegar and some white sugar. Be careful of using too much sugar as it can overpower the chilli taste. You don’t want an overly sweet chilli sauce. The cooking process might release some fumes that are rather potent. To prevent or minimise this, use a tight fitting lid on your pot.
  • To thicken the sauce, you can use cornflour. Don’t use too much and don’t add it directly to the simmering mixture as it may cause lumps. A good idea is to mix it with a bit of water before adding it to the mixture.

    Make your own sweet chilli sauce with this recipe.

    Ingredients

    • 60 grams red chillies

    • 4 tbsp white sugar

    • 1 clove star anise (optional)

    • 1/2 cup white spirit vinegar

    • pinch of salt

    • 1 cup hot water

    • 1 teaspoon cornflour

    Method

    • Deseed half of the chillies. Chop deseeded and whole chilli’s into quarters. For a more spicy sauce, don’t deseed the chillies and for a less spicy sauce, deseed the whole batch.
    • Soak the chillis in warm water with the star anise for 30 minutes.
    • In a saucepan, simmer the chilli water mixture, white sugar, vinegar and salt for about 10 minutes. Take off the heat.
    • Mix the cornflour with a tablespoon of water and add to the mixture and stir.
    • Let the mixture cool then bottle it in a cool dry place.
