Parsley bacon potato cake: Mouth-watering side dish

Prepare a lip-smackingly delicious side dish in just 30 minutes. This parsley bacon potato cake is unlike any other side dish you have tried before. The combination of crispy bacon pieces with grated potato, egg and parsley is so tasty.

This parsley bacon potato cake recipe also includes one teaspoon of chilli flakes to give it a little spicy punch. If you are a fan of hot and spicy food, you can increase the quantity of chillie flakes. On the other hand, you can also decrease or omit the chillies if preferred.

Within 10 minutes you can have the batter ready and pour it into your pan to cook to perfection. The cooking time is about 20 minutes. Make sure you hang around because when the bottom is golden-brown you need to flip it to the other side.

When the parsley bacon potato cake is ready, cut it into pizza slices while you deeply inhale the delicious aroma escaping from this savoury cake.

    Ingredients

    • 3 potatoes

    • 3 eggs

    • 1 handful of parsley

    • 1 teaspoon salt and pepper

    • 1 teaspoon chill flakes

    • 1 tablespoon rice flour

    • oil to fry

    • 8 slices bacon

    Method

    • Peel and wash the potatoes. Grate the potatoes and soak them in cold water.
    • Chop the parsley, add the eggs in a bowl with the parsley and chill flakes. Fry the bacon and make it crisp. Chop the bacon and add to the parsley mixture.
    • Drain the potatoes, add the rice flour and mix well. Add salt and pepper and pour in the egg mixture. Mix well.
    • Heat a pan with 4 tablespoons of oil. Pour in the mixture, fry until golden brown underneath or well-cooked. Turn it to the uncooked side and add more oil. Cook until golden brown.
    • Remove from the heat and cut into pizza slices. Serve with any sauce.
