Egg & Mince on Toast – The breakfast of kings served at home

Sometimes yu need a good source of energy and you don’t always have time to cook something major. Beef mince on toast with an egg is very easy to make and great if you prepare your food in advance. Egg & Mince on Toast is so good at providing an energy boost to the start of your day that many athletes swear by it. That’s why it’s also called the surfer’s breakfast. We don’t all have time to make breakfast in the morning and you don’t need much time to make this one.

The beef mince in this recipe only takes 25 minutes to make but you can easily make one or more batches a few days in advance. Just remember to store it in a glass container in the fridge. Beef mince and an egg boosts your body and its working capacity with a good amount of protein. The potatoes and toast add some carbs for extra energy for your day. Eggs & Mince on Toast is a great pre-workout meal as it isn’t too heavy but provides the energy you need.     Ingredients

    • 500 g lean mince

    • ½ tsp crushed garlic

    • 1 tsp tomato paste

    • ½ tsp mixed herbs

    • 1 chopped onions

    • 1 tsp butter

    • 100 ml water

    • 1 tsp chopped parsley

    • 1 cubed potato (optional)

    • BBQ spice

    • salt & pepper

    Method

    • In a saucepan, heat the butter. Fry the onions and add the mince. Brown the mince.
    • Add the water. Simmer for 20 minutes on medium heat.
    • Serve on a slice of toast with a fried egg on top. Garnish with parsley.
