French Toast Cups – Eggs & berries to start your fit day

We all love a good breakfast to start the day. If you like keeping fit and healthy, you want a combination of protein, carbs and some fruit to get you going. Not only are these French Toast Cups great for your breakfast, they are also tasty and perfect for your pre-workout meal. They are light and fluffy so that you don’t feel too full and will keep you satiated until lunch.

Eggs are one of the best sources of protein, fats and Vitamin B while berries provide fibre and other vitamins as well as minerals. The bread makes it easy to eat and adds some much needed carbs, especially if you’re about to have a workout. They are perfect for the health-conscious individual or family to get the day started right. Each serving is only 215 calories and takes less than 15 minutes to make from start to finish.

French Toast Cups Recipe

    Ingredients

    • 2 slices Wholegrain bread

    • 2 large Eggs

    • 1 tsp Sugar

    • 1 tsp Cinnamon

    • 125 ml Low-fat cow’s milk

    • 50 g Fresh raspberries/blueberries

    Method

    • Break the eggs into a small bowl and beat well.
    • Add the milk to the egg mixture and mix well.
    • Place each piece of bread into the egg mixture and turn on each side.
    • Once soaked, place onto a medium hot non-stick pan.
    • Let it cook until golden brown.
    • Sprinkle the sugar and cinnamon on top.
    • Serve with the raspberries/blueberries as garnish.
