Chickpea Chips – A crunchy snack for the healthy individual

What’s the best snack to enjoy when you’re feeling a bit peckish? More often than not, it’s something crunchy. Crunchy snacks are great for those days that you have guests or even on your own at work. However, if you’re looking for something crunchy and tasty that will also keep you going on your healthy diet, it would be these Chickpea Chips. They are perfect for a vegan, vegetarian or plant-based diet.

Chickpeas aren’t just great for texture when they are baked, but provide great fibre and protein as well. When you’ve tried these golden, crunchy snacks, you’ll never want to buy another bag of potato chips again. They are spiced with cayenne pepper, coriander, paprika and turmeric which gives them the ultimate flavour-bomb. These chips are particularly great for meal-prep day because they are just drained, spiced and baked in the oven.

Chickpea Chips Recipe

    Ingredients

    • 1 can Roasted tinned chickpeas

    • 1 tsp Cayenne pepper

    • 1 pinch Salt

    • 1 pinch Pepper

    • 1 tsp Dried coriander

    • 1 tsp Paprika powder

    • 1 tsp Turmeric

    • 1 tbsp Extra virgin olive oil

    Method

    • Preheat the oven to 180°C.
    • Drain the chickpeas until fully strained.
    • Place the chickpeas into a medium bowl, add the herbs, spices and olive oil.
    • Once fully mixed through, place onto a baking tray that has been sprayed with cooking spray.
    • Place into the oven until golden brown/crunchy.
    • Serve cold.
