Traditional Hertzoggies – Delicate jam tartlets topped with coconut meringue

Love a typical South African treat? Then, this Traditional Hertzoggies recipe is just the one for you to try. One bite into these sweet tartlets and a flood of happy childhood memories will be awakened.

Traditional Hertzoggies are sweet tartlets filled with apricot jam and topped with a cloud of coconut meringue. They are simply divine and it is impossible to stop after eating one.

Hertzoggies are named after General Hertzog who was South Africa’s Prime Minister from 1924 to 1939. These tasty bites were apparently his favourite snack.

To bake Traditional Hertzoggies you need a patty pan tray, but you can also use a muffin pan if you don’t have a patty pan.

Enjoy these delightful South African bites at teatime or as an any-time snack. They are also often served at celebrations on platters.

Traditional Hertzoggies Recipe

    Ingredients

    • Pastry
    • 250 ml all-purpose flour

    • 15 ml sugar

    • ½ teaspoon salt

    • 1 teaspoon baking powder

    • 65 g cold butter

    • 2 egg yolks

    • 25 ml water

    • Coconut meringue
    • 250 ml desiccated coconut

    • 100 ml sugar

    • 2 egg whites

    Method

    • Preheat the oven to 180°C and grease a patty pan tray.
    • In a mixing bowl sift the flour, salt and baking powder together and rub in the butter with your fingers.
    • Add the sugar, egg yolks and water and knead to form a soft dough.
    • Roll the dough out to half a cm thickness and cut with a 7 cm small cookie cutter.
    • Press the dough into the tray and fill with jam.
    • Whisk the egg whites to stiff peak stage and add the coconut and sugar.
    • Add a tablespoon of the coconut meringue to cover the jam.
    • Bake in the preheated oven for 20 – 25 minutes until the hertzoggies are golden.

    Notes

    • For a healthier alternative replace apricot jam with diabetic jam and replace sugar with xylitol.
