Traditional Hertzoggies are sweet tartlets filled with apricot jam and topped with a cloud of coconut meringue. They are simply divine and it is impossible to stop after eating one.
Hertzoggies are named after General Hertzog who was South Africa’s Prime Minister from 1924 to 1939. These tasty bites were apparently his favourite snack.
To bake Traditional Hertzoggies you need a patty pan tray, but you can also use a muffin pan if you don’t have a patty pan.
Enjoy these delightful South African bites at teatime or as an any-time snack. They are also often served at celebrations on platters.
