Sourdough Pizza Toasties – You don’t need an oven to make pizza
Whomever said that you can’t have pizza on a camping trip has not met South African campers. We love cooking food on an open fire and we always find a way to do it, even when it feels impossible. Who doesn’t love pizza on the weekend? With the Sourdough Pizza Toasties, we combine all of the great things about pizza and braai.
The easiest way to start, is to buy your ready-made pizza bases from your local bakery or supermarket. The recipe includes very basic ingredients that you will find in any South African braaibroodjie (South African toastie). You are more than welcome to add anything your heart desires, like chili, bacon or more cheese. You can use a pinch griddle to keep your pizza together or carefully flip it on the braai. You’ll know it’s done on a side when you see black grid marks on the base. If you have made your own sourdough base, you can even fold one base over and make a braai calzone.

Sourdough Pizza Toasties Recipe

2 Ready-made sourdough pizza bases
-
Mozzarella
-
Garlic to taste
-
Thinly sliced onion strings, raw
Method
- Top the pizza with the cheese, onion and garlic, then put the other pizza on top like a sandwich.
- Braai on an open fire grid until the cheese is oozing and the bases are a little charred. You will see the black grid marks.
- Cut up into pizza slices just like a pizza, and serve with your braai meat and salad of choice.
