Easy Beetroot Salad – Add some colour to your next braai

It’s summertime in South Africa and the perfect season to light a barbecue fire. Add some vibrant colours to your table with this easy beetroot salad. Many seasoned barbecue professionals like Barry Hilton, also known as “The Cousin” will concur that no braai is complete without a beetroot salad.

Not only is this easy beetroot salad juicy and delicious but very wholesome. Beetroot protects us against heart diseases such as heart attacks, heart failures and strokes. It further also helps to keep our blood pressure low.

As if this is not amazing enough, beetroot is a rich source of dietary nitrates which can improve athletic performance. Nitrates also increase blood flow to the brain, thereby improving brain function. Beetroot also contains anti-inflammatory properties and is a great source of fibre, improving digestion.

So, next time you go to the supermarket, make sure you add beetroot to your shopping list for your next braai. You won’t be disappointed!

If you are short on time, simply cook the beetroot in the microwave. It works perfectly and taste just as delicious as beetroot cooked on the stove.

    Ingredients

    • Salad
    • 1 kg beetroot, cooked and diced

    • 4 boiled eggs, sliced

    • 1 packet olives

    • diced feta to taste

    • 1 red onion, thinly sliced

    • chopped chives and/or parsley

    • salt and pepper to taste

    • Dressing
    • olive oil

    • balsamic vinegar

    • Dijon mustard

    • lemon juice

    Method

    • Mix all the salad ingredients together.
    • Mix the dressing ingredients together to taste and toss through the finished salad.
    • Season and serve.
