Creamy Lemonaise and Mint Chicken – A taste sensation

Add some zest to your next chicken dish. This Creamy Lemonaise and Mint Chicken recipe is tangy, creamy and loaded with flavour. Mixed with a variety of fragrant spices like masala, turmeric, coriander and mint, this dish is a taste sensation your taste buds will not easily forget.

The slightly spicy marinade sauce is packed with heartful benefits of cholesterol-free canola oil and pairs perfectly with chicken. However, if you prefer a vegan option, simply substitute the chicken with tofu. You can also use any other plant-based protein or vegan alternative. It’s just as delicious and loaded with flavour.

    Ingredients

    • 2 tablespoons B-well Canola Oil

    • 6 tablespoons B-well Lemonnaise

    • 4 skinless free-range chicken breasts, diced/cubed

    • 1 tablespoon garam masala

    • 3 cloves garlic, crushed

    • ¼ cup mint, chopped

    • 1 tablespoon ginger, crushed

    • 2 fresh chillies, chopped

    • 1 teaspoon coriander powder

    • 1 teaspoon turmeric

    • ½ teaspoon lemon juice

    • ½ cup fresh coriander, for serving

    • black pepper, to taste

    • salt, to taste (½ tsp- recommended low-salt amount), optional

    • lemon wedges, for serving

    • fresh coriander, for garnish

    Method

    • Prepare and dice chicken pieces to medium/bite size cubes.
    • Combine the garam masala, chilies, turmeric, coriander powder, lemon juice and B-well Lemonnaise, then add crushed ginger and garlic and season with pepper to taste.
    • Add the chicken cubes to the spiced yoghurt marinade and rub to coat evenly, refrigerate and marinate for 30 minute.
    • In a large pan, heat up the B-Well Canola Oil and add the marinated chicken.
    • Add half of the chopped fresh coriander and cook for 8 – 10 minutes, stirring occasionally to make sure chicken cooks through evenly and cooked through.
    • Turn off the heat and garnish with the rest of the fresh coriander.
    • Serve the hot chicken with a fresh salad, Naan Bread, or accompanying a veggies and rice side. Enjoy!
