South African ‘Roosterbrood’ Dagwood – A braai’s best friend

What is a South African braai without ‘roosterbrood’? It’s the perfect side dish to any weekend get-together with friends and family. But, we are stacking this braai-toasted South African “Roosterbrood” Dagwood sandwich to the rafters. This sandwich is a mountain of flavour and South African spirit.

We have included a great dough recipe to make your own bread for the ultimate experience. You can also use any type of steak for this sandwich too. You can even turn it into the perfect brunch sandwich with steak leftovers, cutting down on prep time. The recipe states pan-fried ingredients, but if you have a flat iron grill, you have the perfect outdoor set-up.

This South African “Roosterbrood” Dagwood is perfect for a weekend camping trip, brunch leftovers or weekend braai with your favourite people.

    Ingredients

    • ROOSTERBROOD
    • 1 kg white flour

    • 2 tsp salt

    • 1 tbsp sugar

    • 10 g instant dry yeast

    • 60 g butter, cut into small cubes

    • 600 ml lukewarm water

    • DAGWOOD
    • steak, pan-fried or done on the braai, sliced thinly, (optional)

    • eggs, fried to your taste 

    • bacon, panfried on the grill

    • tomatoes, sliced

    • red onions, sliced

    • cheese portions sliced

    • ketchup (tomato sauce)

    • ¼ cup canola mayonnaise

    • 1 tbsp Dijon mustard 

    • 2 tbsp dill pickle relish

    • iceberg lettuce leaves washed and ready to plate

    Method

    • ROOSTERBROOD
    • Mix the flour, salt and sugar together.
    • Add the butter into the flour mixture, rubbing with your fingertips until mixture resembles crumbs.
    • Add the yeast to the lukewarm water, let it stand for 5 minutes then add to the dry ingredients to form a soft dough. 
    • Turn dough out onto a floured surface. Knead until smooth and elastic. 
    • Place the dough in a large greased bowl. Cover and allow to stand in a warm place until doubled in size.
    • Knead the dough again and shape into 12 balls or roll out enough to just cut out 12 squares 
    • Place them onto a greased pan and allow them to stand for a further 10 minutes.
    • Flatten slightly and sprinkle with flour.
    • Cook over low fire for 10 minutes on each side.
    • Tap the ‘roosterbrood’ with your fingers and if it makes a hollow sound, it’s done.
    • DAGWOOD
    • Combine ¼ cup canola mayonnaise 1 tablespoon Dijon mustard 2 teaspoons dill pickle relish, This is optional or just use Ketchup.
    • Pan-fry your steak and eggs.
    • Wash the lettuce and set aside.
    • Slice the onions and tomatoes and cheese.
    • Make your dagwood by starting with lettuce and ending with lettuce and season with Ketchup or sauce that you combined.
