Pork Curry – Mid-week meal for those on the move

There is just something about curry. It’s like a romance between stew and aromatic spices that make the soul happy. Pork Curry can take many shapes and forms, so you are welcome to use any type and as much curry paste as your heart desires. This recipe is ready in less than an hour, so it’s great for a busy family life, or a batch of meals for the week if you like preparing your meals ahead of time. Don’t forget, curry tastes even better when it has rested.

The shopping list of ingredients is easy to find. However, you might realise that most of these will already be in your fridge or pantry. You want to use lean pork with most of the fat removed for the best results. When frying the onions and aromatic spices and curry paste, when it starts smelling aromatic and delicious, you can move onto the next step. Serve the curry with plain boiled rice.

    Ingredients

    • 900 g pork chopped, remove all excess fat and slice in cubes

    • 3 tbsp sunflower oil

    • 1 large onion, peeled and chopped

    • 1 tsp grated ginger root

    • 2 garlic cloves, crushed and peeled

    • 2 tbsp curry paste, more if you like it hot

    • 400 g canned chopped tomatoes

    • 150 ml vegetable stock

    • juice of one lemon or lime

    • Salt and freshly ground black pepper

    • coriander leaves, to garnish

    • plain yoghurt

    Method

    • Heat the oil in a large heavy-based frying pan and fry the onion for 5 mins until caramelized.
    • Add the ginger and garlic and fry for a further 5 mins.
    • Stir in the curry paste and cook for 1 minute then add the pork and sauté over medium heat, sautéing until the pork is no longer pink.
    • Add the chopped tomatoes and stock and bring to the boil.
    • Reduce the heat to a simmer and cook for 20-45 mins until the pork is tender and cooked through, stirring occasionally, and until the sauce has reduced to a nice thick consistency.
    • Add the lime or lemon juice and season to taste with salt and freshly ground black pepper.

    Notes

    • Serve with yoghurt and garnished with coriander leaves.
