Mushroom and Spinach Plate – A tasty way to start your day

Mushrooms and spinach are packed with micronutrients. The mushrooms contain copper, which helps with iron utilisation and you guessed it, the spinach is packed with iron. Mushrooms also contain B Vitamins. Spinach is also one of the best sources of dietary magnesium, which is necessary for energy metabolism, maintaining muscle and nerve function, regular heart rhythm, a healthy immune system, and maintaining blood pressure. The eggs provide another source of vitamin B, fats and protein for one stacked breakfast.

    Ingredients

    • 1 baguette, cut into small cubes

    • 1 tbsp unsalted butter

    • 1 medium onion, halved and thinly sliced

    • 200 g mushrooms, thinly sliced

    • 1 clove clove of garlic, chopped

    • 1 tsp chopped fresh thyme

    • 1 tbsp mustard

    • 4 handfuls baby spinach

    • 4 large eggs

    • 1 cup whole milk

    • ¾ cup grated cheddar cheese

    • salt and freshly ground black pepper

    Method

    • Position a rack in the centre of the oven and heat the oven to 450°F / 232°C.
    • Spread the bread cubes on a large baking sheet and toast in the preheated oven until dry and golden, or longer if you like it more toasted, about 3 to 5 minutes.
    • Melt the butter in a skillet over medium heat, add the onion and cook, stirring occasionally, until tender but not browned, 3 minutes. 
    • Add the mushrooms, garlic, thyme,  salt and pepper. Cook, stirring occasionally, until the mushrooms are soft, about 3 minutes. 
    • Add the spinach and cook, stirring occasionally, until wilted, 1 to 2 minutes.
    • In a medium bowl, whisk the eggs, milk, mustard, salt and pepper. Add the cheese and bread, toss until combined, and transfer to the oven dish. 
    • Stir until all of the ingredients are distributed evenly and then press down the mixture to flatten it a bit.
    • Bake, covered, for 10 minutes. Uncover and continue to bake until set in the centre, about 5 minutes more. 

    Notes

    • Serve with a salad of your choice
