Cowboy Breakfast Quiche – A meal bound to put a new skip in your step

Do you need a lot of energy for the day? Are you looking for a light breakfast or brunch meal to put another giddy-up into your step? This Cowboy Breakfast Quiche is where old-school meets new-school. You can even serve everybody a slice at your next tea party.

There’s a reason that bully beef (corned beef) has lasted so long. This great-tasting protein source, preserved in a tin, is bound to keep you energised for the rest of the day. Add some eggs and cheese, and you’re well on your way to a new flavour destination. All of the great things that make a great farm breakfast, changed and baked into a new-school Cowboy Breakfast Quiche.

    Ingredients

    • CRUST
    • 1 cup flour

    • 1 cup cheese, grated

    • 125 ml melted butter

    • 5 ml paprika

    • FILLING
    • 5 ml butter

    • 1 onion, chopped

    • 1 tin Bully beef (corned beef) cut into cubes

    • 1 tsp mixed herbs

    • salt & pepper

    • TOPPING
    • 6 eggs

    • 125 ml cream

    • 1 tsp wholegrain mustard

    • 1 cup cheese, grated

    Method

    • Mix the crust ingredients together. In a greased pie dish, evenly spread the crust in the base.
    • In a saucepan, heat the butter. Fry the onions. Add the bully beef. Season. Spread evenly over the crust.
    • Mix the eggs, cream and mustard. Pour over the filling. Sprinkle the cheese over the top.
    • Bake for 30 minutes at a preheated oven at 180 °C
