Puff Pastry Apple Pie – A twist on an old favourite

You can’t beat the aroma of freshly baked pie straight out of the oven. This twist on a traditional apple pie recipe made with puff pastry, apples and cinnamon is truly irresistible. You will be dancing for joy this summer when you taste this Puff Pastry Apple Pie recipe.  

The filling is made with fresh apples and will surprise you with how easy it is to make. Layers of buttery, flaky crust interlaced with a juicy apple filling, makes the most delicious pie. The recipe includes raisins, but you can opt to leave them out if you prefer it. You can also use store-bought puff pastry for the crust.

Tip: Make sure you use tart and firm apples such as Granny Smith, Pink Lady or Gala apples. Avoid using red or Golden Delicious as these will go soft and turn mushy. Pectin is the ‘glue’ that holds together plant cells, which gives fruits their shape and structure. When apples are cooked, this pectin breaks down, and the apples become soft.

    Ingredients

    • 1 roll puff pastry

    • 2 apples (cored and unpeeled)

    • 1 tbsp lemon juice

    • cup brown sugar

    • 4 tsp ground cinnamon

    • ¼ cup raisins (optional)

    Method

    • STEP 1
    • Pre-heat oven to 200C. Grease and flour a springform round cake pan. (If you don’t have a springform pan, line the cake pan with baking paper)
    • In a small bowl mix together the brown sugar and cinnamon. set aside.
    • Remove the core from the apples, but do not peel. Cut into quarters and thinly slice the apples.
    • Place the apples in a bowl and add the lemon juice and mix.
    • Once all the apples have been sliced, coat them in the cinnamon sugar mixture.
    • STEP 2
    • Roll out the puff pastry. Cut a circle about 10cm larger than the pie pan.
    • Cut the remaining pastry into strips and set aside.
    • Place the cut circle in the prepared pie pan.
    • STEP 3
    • Place a few apple slices around the border of the pastry.
    • Then add a strip of pastry around the apple slices.
    • Repeat with a layer of apples around the edge, followed by a strip of pastry.
    • Repeat this process until you reach the middle.
    • Bake at 200C for 15 minutes then lower the temperature 180C for approximately 15 minutes or until golden brown.
    • When complete, let it cool before cutting into it.
