Try a strawberry and cauliflower smoothie to get those veggies in

The nutrient content of raw vegetables, such as cauliflower is higher than when it is cooked. Why is that? Well, heat can destroy important nutrients found in the raw ingredients.

Many vegetables like baby spinach, mushrooms or cauliflower can be mixed with strawberries, bananas and other fruit to give a healthy smoothie.     Struggling to eat raw vegetables? Try out this delicious smoothie instead.

    Ingredients

    • 1 cup strawberries frozen

    • 1/2 cup mango frozen (you can substitute with apple or kiwi)

    • 1/2 cup cauliflower (either steamed and cooled, or raw riced)

    • 1/4 cup cucumber peeled

    • 1/4 cup lemon juice

    • 1/2 cup coconut water

    • 2 white mushrooms washed

    Method

    • Blend everything until smooth, then serve in a glass.
