Make the perfect Roasted Vegetable Dip for your next family night

Whenever I am visiting a friend for a braai or just a casual catch up I find myself fighting the urge to refuse the snacks. Especially when there is a dip alongside it. Dips just make the snacks that more compelling to be enjoyed.

However, most dips are full of unhealthy properties such as trans fats and sugars. That is why I needed a different recipe. One that is still tasty and that will be enjoyed by young and old.

So after trialling a few ideas I roasted some veggies and added some flair to create this incredible dip. To serve, I placed it with savoury biscuits and a variety of crisps.

Roasted Vegetable Dip

    A healthy dip made of roast vegetables that still carries all the flavour that a good dip should.

    Ingredients

    • 2 chopped onions

    • 2 peeled garlic cloves

    • 1 quartered red pepper

    • 1 chilli

    • 8 patti pans

    • 4 sliced zucchini’s

    • 2 tablespoons olive oil

    • salt

    • fresh black pepper

    • 1 cup cream cheese

    • 1/2 cup whipped unsweetened cream

    • 100 ml mayonnaise

    • 50 ml sweet chilli sauce

    • 15 ml lemon juice

    • 1 finely diced red onion

    • 1 cup grated cheddar cheese

    Method

    • On a greased baking tray, place your vegetables and garlic evenly. Drizzle with olive oil, salt and pepper. Bake in a pre heated oven, 180 degrees, for 20 minutes.
    • In a food processor, combine your vegetables, cream cheese, cream, mayo, sweet chilli and lemon juice.
    • Season to taste.
    • Garnish with red onion and cheese.
