Greek style Lamb Chops with Homemade Mint Sauce

Lamb chops are such a versatile mid-week dinner. They are quick to make and can be served with any sides of your choice. 

This recipe is for a Greek inspired version of lamb chops. Marinating the lamb in lemon, garlic rosemary enhances the flavour and the acidity of the lemon balances the richness of the lamb

Mint sauce has always paired well with lamb as the mint cuts through the fattiness of the lamb. Making your own mint sauce is easier than you think and tastes so much better than the store bought version. 

Serve the lamb chops with mash or polenta and side veggies of your choice for the ultimate family meal.

    These Greek style lamb chops are worthy of a prize, especially when paired with the home-made mint sauce. A fantastic meal in under an hour.

    Ingredients

    • 6 lamb chops

    • Salt and pepper to season

    • Ingredients – Marinade
    • 2 tablespoon rosemary, chopped

    • 1 tablespoon origanum

    • 1 teaspoon smoked paprika

    • 2 tablespoon crushed garlic

    • 1/4 cup olive oil

    • juice of a lemon juice

    • Ingredients – Mint sauce
    • 40 grams fresh mint

    • 4 tablespoons boiling water

    • 2 tablespoons white vinegar

    • 1 tablespoon sugar

    Method

    • Season the chops with salt and pepper.
    • Mix the marinade ingredients together and rub over the chops.
    • Allow to stand for 30 minutes to 1 hour in the fridge.
    • Heat olive oil in a frying pan over medium high heat.
    • Cook the chops on each side for 5 minutes, or how you like them done.
    • Method – Mint sauce
    • De-stalk the mint and finely chop the leaves. You can also pop the mint leaves into a blender.
    • Add the mint to a heat proof bowl. Add the boiling water, sugar and vinegar and stir. Allow to stand while you cook the chops.
    • Drizzle the sauce over the cooked chops.
