The perfect breakfast snack: Healthy Banana Muffins

If you enjoy a freshly baked muffin straight out of the oven as much as I do, then this recipe is for you. I have been experimenting with low-sugar recipes for a while now. This recipe uses dates as a natural sweetener and doesn’t compromise on flavour.

Not only are these banana muffins quick to make, I only used one mixing bowl which makes cleaning up so much easier.

Banana Muffin Recipe

    These banana muffins are moist and delicious and naturally sweetened. They take just a few minutes to make and are perfect for quick breakfasts and snacks.

    Ingredients

    • 3 ripe bananas, mashed

    • 3 eggs

    • 1 cup of dates, chopped

    • 1/4 cup honey

    • 1 teaspoon cinnamon

    • 1 teaspoon baking powder

    • 1 teaspoon bicarb

    • 2 cups flour

    Method

    • Preheat oven to 180 degrees Celsius. Line a muffin tray with muffin liners.
    • Soak the chopped dates in a 1/4 cup of boiling water to soften them.
    • In a large mixing bowl add the mashed banana, eggs and cinnamon. Mix well.
    • Add the dates and honey and mix.
    • Add the flour, baking powder and bicarb and mix.
    • Spoon into a muffin trays.
    • Bake for 15 minutes, on until cooked through. Remove from the oven and allow to cool.
    • Serve warm with butter.

    Notes

    • To make these muffins even more healthy, add a 1/2 cup of any of the following: sunflower seeds, raisins, oats or chopped nuts.
