Recipe: SA-Style Pumpkin Fritters with Cinnamon Sugar

Although there are quite a few variations, this recipe resembles a thick pancake with pureed pumpkin.

Enjoy as a treat after a meal or with your afternoon cup of tea.

    This easy pumpkin fritter recipe is traditional South African classic.

    Ingredients

    • 1 cup cake flour

    • 2 teaspoons baking powder

    • pinch of salt

    • 3 teaspoons sugar

    • 1 cup cooked mashed pumpkin

    • 3 teaspoons melted butter

    • 100 ml milk

    • 1 egg

    • 5 ml vanilla essence

    • oil for frying

    • cinnamon sugar for serving

    Method

    • In a bowl sift together the flour, salt and baking powder and stir in the sugar.
    • In a separate bowl whisk the egg and add milk, melted butter and vanilla essence.
    • Gradually add the egg mixture to the flour, alternating with the pumpkin, and stir with a wooden spoon until you have a thick and smooth batter.
    • Allow the mixture to rest in the fridge for 30 minutes.
    • Spoon the batter into a frying pan with oil, over medium-low heat.
    • Once the mixture forms bubbles on top you will know it is time to turn the fritter and cook the other side.
    • Cook until golden. To serve, sprinkle with cinnamon sugar.

    Notes

    • You can make a variety of fritters, sweet or savoury, depending on what fruit or vegetables you have on hand.
    • Add mashed bananas for banana fritters or omit the sugar and add grated baby marrows for savoury baby marrow fritters.
