Light and Fluffy: Homemade Pillow Gnocchi Recipe

We all love a good Gnocchi meal, simple, tasty and literally melts in your mouth. However, the thought of making your own might sound more like a mission that the result being worth it? This easy at home recipe will change your mind.

Lets have a look at the magic ingredients to make these little mellow beauties.

  • Potatoes: Russet are best to mash down
  • Salt: We still want to pack in the flavor
  • Eggs: Scrambled, this is our binding agent
  • Flour: Forms your base

    This homemade gnocchi recipe is quick and easy and so delicious.

    Ingredients

    • 5 – 6 large Russet potatoes

    • 3/4 tsp salt

    • 2 eggs, scrambled

    • 1 1/4 cup flour

    Method

    • Boil your potatoes in a pot of water. Add 1 tablespoon of salt.
    • Boil over a medium heat until the potatoes are soft.
    • Push potatoes through a ricer, or mash up if you don’t have a ricer.
    • Spread potatoes on a baking tray, sprinkle salt over the spread and let cool for 1 hour.
    • Once cool, make the potatoes in a pile and create a well in the middle.
    • Crack eggs in and sprinkle one cup of flour over potatoes.
    • Using your hands combine all the ingredients together.
    • Knead the dough until smooth. Be careful to not over knead.
    • Divide the combined dough into quarters.
    • Roll out each quarter into a rope-like shape.
    • Using a short knife, cut gnocchi into 3-4 cm pieces.
    • Press down with a fork on each piece indenting each piece of gnocchi.
    • METHOD – TO COOK
    • Bring a pot of water to boil.
    • Season the water liberally with salt.
    • Add gnocchi and cook for 7-8 minutes.
    • Serve with an accompanying sauce.

    Notes

    • Storage: You can store in an air-tight container for up to 5-7 days.
