Easy weeknight dinner: Saucy sausage pasta recipe

Pasta is one of the most versatile meals you can make. You can whip up a great pasta dinner using just a few ingredients.

I used lamb sausage in this recipe but you can use pork sausage, chorizo or bacon instead. The penne can also be substituted with your favourite pasta.

    Ingredients

    • 1 pack penne pasta

    • 4 lamb sausages

    • 1 onion, finely chopped

    • 2 garlic cloves, finely sliced

    • 200 g Rosa/cherry tomatoes, chopped in half

    • 1 teaspoon mixed herbs

    • 1 tin chopped tomatoes

    • 2 tablespoon brown sugar

    • feta cheese

    • 1 handful fresh basil

    • salt and pepper to season

    Method

    • Bring a large pot of water to a rolling boil over high heat. Cook pasta in boiling water until the pasta has cooked through, but is still firm to the bite, about 10 minutes. Keep 1/2 a cup of the pasta water.
    • Fry the onion and garlic in a large saucepan until golden.
    • Add the mixed herbs, salt and pepper.
    • Slice the sausage into 1 inch pieces and add the pan with the onions.
    • When the meat is cooked, add the baby tomatoes and tinned tomatoes. Add the brown sugar and simmer for 10 minutes.
    • Once the sauce has reduced and the tomato has cooked, add the pasta along with the 1/2 cup of pasta water.
    • Stir well until all the pasta is coated with sauce. Add the basil and feta.
    • Season with salt and black pepper and serve while warm.
