Easy Bake Homemade Bran Rusks With Sunflower Seeds

The first cup of coffee or tea in the morning sets the mood of the day. Dunk in a couple of these crunchy bran and sunflower seed rusks and you are all set. Even my dear friend, Winnie The Pooh, might sacrifice a pot of honey for a few of these rusks.

These bran rusks contain sunflower seeds and coconut. You can get creative and add other nuts and seeds as well if you prefer.

    A quick and easy rusk recipe to enjoy with a cuppa in the morning.

    Ingredients

    • 1 1/2 cup brown sugar

    • 500 grams butter or margarine

    • 1 kg self raising flour

    • 4 cups bran

    • 1 cup diced coconut

    • 1 cup sunflower seeds

    • 3 eggs

    • 700 ml buttermilk

    • 1 teaspoon salt

    • 5 ml baking powder

    • 30 ml vinegar

    Method

    • Melt the sugar and butter in the microwave. Add the dry ingredients. Mix the buttermilk vinegar and eggs together. Add to the mixture.
    • In a rusk pan or large oven pan, place the mixture in the pan. Level the mixture evenly. Bake at 160 degrees Celsius for 1 hour. Cut when cooled and dry overnight in oven on a very low heat with the door slightly ajar. You can use a wooden spoon to keep the door open.
    • Store in an airtight container.
