Big Bran & Apple Muffins – Brunch is served

Bran & Apple Muffins combines the fibre and crunch of bran with the delicious aromatic and spicy flavour of apple crumble. As with most baking recipes, the dry and wet ingredients are mixed separately before adding them together. Be aware of not over-mixing your batter so that your muffins rise properly and stay fluffy. It’s the perfect recipe for when you are inviting friends over for brunch or tea. These muffins are best enjoyed with a smear of butter or fruit and whipped cream.     Ingredients

    • cups all-purpose flour

    • ½ cup digestive bran

    • ¾ cup brown sugar

    • 2 tsp baking powder

    • ½ tsp salt

    • 1 tsp ground cinnamon

    • 1 tsp ground ginger

    • 1 tsp mixed spice

    • 50 g butter (melted)

    • 60 ml canola oil / cooking oil

    • 2 large eggs

    • 1 cup milk

    • 2 tsp lemon juice

    • 1 tsp vanilla essence

    • 1 cup diced apple

    Method

    • Preheat the oven to 180°C.
    • In a large bowl, sift together the flour, baking powder, salt and spices. Add the bran and mix well.
    • Melt the butter in a measuring jug and let cool. Add the oil and eggs , and use a whisk to beat and combine. 
    • In a separate bowl, heat the milk in the microwave to a warm temperature. Add the lemon juice to the milk and stir till the milk curdles. Set aside to cool.
    • Add the milk mixture to the egg mixture, along with the vanilla essence, and use the whisk to combine.
    • Pour the egg mixture into the dry ingredients and mix till just combined. 
    • Fold the apples into the mixture, being careful not to over-mix.
    • Prepare a 6-cup jumbo muffin pan by either greasing with butter or lining with paper cups.
    • Fill the cups till three-quarters full. For extra sweetness you can sprinkle course brown sugar on top of the batter.
    • Bake for 30 minutes or until golden brown.
    • Allow to cool and enjoy!
