Butter chicken – A delicate blend of rich curry spices

    Ingredients

    • 1 kg cubed chicken breast fillets

    • 50 g garlic paste

    • 20 g ginger paste

    • 100 g butter

    • 30 g paprika

    • 20 g cumin powder

    • 200 ml fresh cream

    • 30 g garam masala

    • 100 ml natural yoghurt

    • 50 ml pureed tomato

    • 100 g onion paste

    • 40 g mixed masala

    • 20 g dhania powder

    • 50 g chopped masala

    Method

    • Melt the butter and add the onion, ginger, garlic, paprika, cumin powder, garam masala, dhania powder and the mixed masala. Cook until fragrant.
    • Add the chicken and yoghurt and cook for a further 4 minutes.
    • Add the tomato puree and cook for 8 minutes.
    • Add cream and reduce to a sauce consistency.
    • Season with salt and add clarified butter to finish the dish.
