Barry’s Home-style Potato Salad – Every braai needs potato salad

There’s no argument that potato salad belongs at every South African braai. A big bowl of potato salad is one feature that’s always welcome on the table when your friends and family comes together. This potato salad is so simple that everybody’s Cousin, Barry Hilton and wife Sandy have never bothered to write down the quantities. Just make as much or as little as you want. The cooking time of the potatoes will vary depending on the size of your potato blocks but is around 30 minutes. The parsley and chives provide some great freshness and flavour to this dish. If you want to go a bit creative, some paprika adds some flair and making the beetroot salad is a welcome addition. Barry’s Home-style Potato Salad is best served cold.

    Ingredients

    • Potatoes (depending on amount of guests)

    • Finely chopped onions

    • Mayonnaise

    • Boiled egg, finely chopped

    • Parsley and chives to garnish

    • Salt and pepper to taste

    Method

    • Cut potatoes into small blocks and boil until cooked.
    • Once at room temperature, add the other ingredients.
    • Season to taste.
