Hearty Mutton Stew – It’s like a hug in a bowl

Stews are meaty and delicious. They are simple to make and you can use your own imagination and put your own creative spin on it. This Hearty Mutton Stew is perfect for an evening meal with meat and veggies on a fluffy bed of rice.

Stew is one of the worlds oldest ways of preparing meals. Put everything you want cooked into a pot or pan and wait a while. There’s nothing more to it, other than enjoying every single bite. This meal includes nutrients from everywhere. Protein from the mutton, lots of vitamins and minerals and some energy-boosting carbs too. All of these combine for the best kind of comfort food with this Hearty Mutton Stew.

    Ingredients

    • 1 kg mutton stew

    • 1 whole chopped onion

    • 1 clove crushed garlic

    • 1 tbsp butter

    • 2 medium carrots, sliced

    • 2 medium potatoes, cubed

    • 1 tsp mixed herbs

    • 1 tsp vinegar

    • ½ tsp sugar

    • 1 tbsp beef stock powder

    • 100 ml warm water

    • 1 fresh rosemary stick

    • salt & pepper

    Method

    • In a sauce pan, over medium heat, heat the butter. Add the onions. Cook the onions till glazed.
    • Add the mutton. Brown the meat, Season to taste. Add the garlic and rosemary. Brown the meat for another 5 minutes, allowing the garlic and rosemary to marinate the meat.
    • Add the rest of the ingredients and simmer for 20 minutes on low heat.

    Notes

    • Serve in a bowl on a bed of rice.
